An atelier hidden in Azabu


In the quiet backstreets of the Azabu district, ten minutes on foot from Tokyo Tower, there is a small counter with seven seats. Here, sushi is not performance.

Seasonal vegetables prepared with kaiseki technique. Fish grilled over Kishu binchotan charcoal. Nigiri judged down to the temperature of the rice. Everything comes from producers the chef has met in person.

The Chef

Takumi Suzuki


Eight years at Kikunoi, a three-Michelin-starred kaiseki restaurant in Kyoto. He then mastered the art of Edomae at Umi, a two-Michelin-starred restaurant in Tokyo, and encountered creativity without borders at Inua.

His goal is not perfection, but connection.
